Difference?
JR-East runs the Shinkansen from Tokyo to Hokkaido
JR-CENTRAL runs the Shinkansen from Tokyo to Shin-Osaka
JR-West runs the Shinkansen from Shi-Osaka to Kyusyu area
However, you can reach to Hakata(Kyusyu) from Tokyo directly.
Mt.Fuji
If you want to see the Mt. Fuji from Shinkansen, you can see it @Shizuoka area. When shinning day, the staff anounces that you can see the Mt. Fuji.

How to buy the ticket?
If you are not attend the guide tour, you should buy the ticket by yourself. Please refer to below web page of JR-East, you can understnad how to buy the ticket by movie. Each ticket vending machines are same. Of course, you can buy the ticket from JR staff@ticket center.
Type of seat
You can choose resavation seat, non-reserved seat. Of course, if you buy resavation seat ticket, you pay additional cost. In additon, resavation seat has some kinds of seat.One is nomarl resavation seat, and the other is green ticket or granclass like as airplain's business class or first class.Please refer to below JR-East web site.

Time table
In case of JR-CENTRAL, Japanese calls it as Tokaido-Shinakansen, if you see the time table on time table display @ the station, you will be suprised by time-table. Shinkansen is run each 5min to 10min. Of course, there is no delay without accidents are not occured.
Which type of Shinkansen you ride?
If you deceid the destination, you can chose Shinkansen type. It's means which stations you will reach. For example, JR-Central Tokaido shinkansen runs 3type of Shinakansen, one is Nozomi and the others are Hikari and Kodama. When you want to Nagoya from Shin-Yokohama,
- NOZOMI; Non stop from Shin-Yokohama to Nagoya
- Hikari; Shin-Yokohama - Odawara(or a few stops) - Nagoya
- Kodama; Every stops

When you ride the Shinkansen without snacks or drinks, no problem. You can buy it in the Shinkansen. The seller will come to you.

Shinkansen and Japanse train system are diffrent from Europe or Americas, however, you can understand Japanese systems by each JR web-site. I found a lot of traveler of foreginer in Shinkansen, don't worry, if you visit to Japan as first time.
